This recipe makes either stuffed pepper or stuffed cabbage soup. It's my mom's reipe, and it is extremely tasty. As I was making this very batch in the photos, my one year old was trying desperately to get a taste!
Ingredients:
3 green peppers, chopped (or a small cabbage, chopped)
1 lb. ground beef (or sometimes I use ground turkey)
1/2 cup chopped onion
4 small tomatoes, chopped
1/2 cup uncooked rice
1 cup beef stock
1 tsp. salt
1 tsp. Worcestershire sauce
1 jar vegetable or tomato juice
1 clove garlic
1 tsp. oregano
pepper to taste
Cook ground beef, onion, and green peppers (or cabbage) until meat is browned and vegetables are tender.
Drain of excess fat. Add tomatoes, uncooked rice, beef stock, salt, Worcestershire sauce, garlic, oregano, and pepper. Bring to a boil; reduce heat, cover, and simmer for 15-18 minutes or until rice is tender.
Then, add a container of tomato or vegetable juice. Cook on medium heat for about 30 minutes.

I'm going to bookmark this recipe... Regular stuffed peppers are one of my favorite meals, so I'll have to give them a try in soup form. ;)
